Feast of St Ethelburga Menu
My Lords and Ladies of the Shires, may I present to you our planned programme of food below, please read and anticipate at your pleasure. Also, let me know if you feel you will not draw sufficient sustenance from the dishes proposed due to conviction or condition. A final programme of courses will be available on the night. Please check back nearer the date for any adjustments.
1st Course:
Frumenty: (a mix of meat, wheat, broth, eggs)
A Roast of Beef, accompanied by Tournai Cameline Sauce or Mustard
Norfolk Fool
Green Pesen Royal (pottage of peas, herbs, almond, egg)
Mushroom Pasties
Bread
An Assortment of Apples and Pears
2nd Course:
Orange and Cinnamon Chicken
Tarte of Strawberries or Other Fruit
Tarte of Spinage (Spinach tart)
Pokerounce (honey, toast and pine nuts)
Voide:
Rissoles of Pork (small patties of pork in wine, fruit, pine nut and spices)
Wafers and Angels Food (whipped cream cheese, honey and rose water)
An Assortment of Nuts, Fruits and Cheese
